Cooking in Quarantine

I'm sure we have all been cooking up a storm, and I have been as well.  More than I ever have.  I love to cook but I must admit, even for me it's a lot, the dishes are the worst.  I have found some amazing items to keep me healthy and satisfied.  I've been primarily shopping at Trader Joe's, as I enjoy some of their prepared items and it's low prices.  

I love the Trader Joe's organic marinara sauce.  I usually make my own sauce but I haven't felt much like it during this time.  It is damn good for store bought, the best I've ever tried.  I just add to some turkey meatballs and the organic broccoli with a salad for an easy meal.  

The eggplant parmigiana is to die for!!! Seriously, this is a staple item for those nights when you just want to have a tv dinner.  Just pop it in the oven and let it bake, and it's insanely delicious.  My friend Amanda and I both gushed over how good it is.  Don't wait my friend!  

I love organic chicken tacos and I decided to try Trader Joe's taco seasoning.  I didn't even know they sold it.  It was in the tortilla chip aisle, so I grabbed it and cooked the chicken in sautéed garlic and onion, broth, added some of the organic tomato sauce, and sprinkled the taco seasoning over the chicken and let it simmer.  I shredded the chicken for tacos and it was to die for!  You don't always have to eat out, you can create an amazing taco Tuesday at home.  

It took me weeks to find peanut butter or almond butter during this pandemic.  I had to buy one of those national brands and it was awful!  Tastes like pure sugar.  Finally, it was restocked for my delight so I could spread on my organic rice cakes.  I don't like waste so, I finished that sugary mess in my whole food protein shakes so I couldn't taste it.  

For your sweet tooth I indulged too many times on Trader Joe's gluten free mini cupcakes.  Seriously, why did I buy them?  The vanilla isn't my favorite, but the chocolate is too die for!  Cooking can be fun in quarantine and cooking at home is the healthiest for you anyway.
